Bold, roasted and unmistakably chicory-forward — this is the degree-coffee cup, not a flavoured instant. Chicory adds body and a dark, slightly caramelised edge that plain coffee does not have, which is exactly what the South Indian cup is built around.
The default coffee across South India, so it needs no explanation to the customer who wants it and offers a real point of difference to the one who has only had cappuccino. Essential for South Indian restaurants, tiffin service, hotels and any menu claiming regional authenticity.
Hot milk and sugar, pulled between tumbler and dabara if the service allows it — the aeration is part of the drink, not theatre. This is the one coffee here that should not be served black.
This is the only product on this page that you brew. It is roasted coffee and chicory for a filter, which means a drip, a wait, and a decoction strong enough that it is diluted with milk rather than topped up with it — the classic degree coffee is roughly a third decoction to two thirds milk. That wait is not overhead, it is the product: the filter is what produces the body and the bitterness that the cup is built on, and no instant reproduces it. Set the decoction down in the morning and it will serve a counter for hours, which is exactly how the tiffin rooms that made this cup famous have always run it.
