What is cheese foam?

A salty-sweet crema cap that floats on the cup.

Cheese foam — also called crema or “cheese tea” foam — is a salty-sweet whipped topping that sits as a thick, creamy cap on top of a cold drink. A spoonful of foam powder is dissolved in a little hot water and whisked until smooth, then poured gently over the drink so it floats rather than sinks.

The result is the signature crema layer behind viral cheese-tea, cheese-foam milk tea and cold-brew menus — rich on the lips, lightly salted against a sweet base. Adjust the dosage for a lighter or richer foam cap.

Whisk the crema
Dissolve 10–12 g of foam powder in 30–40 ml hot water (80–90°C).

Whisk or froth until smooth, creamy and thick enough to hold a stable foam.
