Green tea is best brewed gently. Use about 2 g of leaf per cup, heat water to 70–80°C — just off the boil — and steep for 2–3 minutes. Fully boiling water scorches the leaf and turns it bitter, so let the kettle settle first.
Serve it plain, with a little honey or lemon, or iced over the day. Good orthodox leaf will re-steep two or three times. The range spans plain Regular and Darjeeling through Tulsi, Masala, Peppermint and a Kashmiri-style Desi Kahwa.
