Zesty, clean lemon against a robust black tea — the flavour most people in India picture when someone says iced tea. The citrus is bright at the front and the tea reasserts itself at the finish, which is what stops it drinking like a soft drink.
This is an iced-tea workhorse: QSR counters, vending, summer menus, event and banquet service, anywhere volume matters more than variety. It is the flavour to stock first if a menu is going to carry exactly one iced tea.
Ice and a sprig of mint is the whole recipe. For a bubble tea, popping boba suits it better than tapioca — the burst of juice reads as part of the drink rather than an addition to it.
A brewed black tea wants three to five minutes, and it punishes you for the fourth — over-extract and the tannins turn it dry and bitter, which is why the last cup of a shift so rarely tastes like the first. An instant decoction removes the variable. The tea is extracted once, under control, and dried; in the cup it dissolves in seconds and the strength is set by how much powder you use rather than how distracted the person making it was. The cup at eight in the evening is the cup you served at eight in the morning.
