Ginger works from the back of the throat forward — you notice the warmth after you swallow, not while the cup is at your lips. Honey rounds off that heat so it reads as comforting rather than sharp. The black base carries both without disappearing underneath them, which matters, because ginger will happily bury a lighter tea.
A monsoon and winter menu item, and the cup most often asked for by someone who has decided against another coffee. It works hard in office and institutional pantries, in hotel room-service tea trays, and on late-evening service where caffeine is wanted but a fresh espresso is not.
Serve it hot, with a wedge of lemon if the counter has one. Over ice with lemon it becomes a completely different and much sharper drink, which is worth having on a summer board. It also takes milk, unusually for a ginger tea, because the honey gives it somewhere to sit.
A brewed black tea wants three to five minutes, and it punishes you for the fourth — over-extract and the tannins turn it dry and bitter, which is why the last cup of a shift so rarely tastes like the first. An instant decoction removes the variable. The tea is extracted once, under control, and dried; in the cup it dissolves in seconds and the strength is set by how much powder you use rather than how distracted the person making it was. The cup at eight in the evening is the cup you served at eight in the morning.
