Popping boba is not only for bubble tea. Here are ten ways to use it in drinks and desserts at home or on a café menu, which flavour suits each one, and the rules that keep every pearl bursting.
Popping boba goes anywhere that is cold and served soon: bubble tea, iced tea, lemonades, mocktails, falooda, ice cream, frozen yogurt, parfaits and dessert cups. Drain it, spoon it in just before serving, and keep it away from heat. Below are ten ways to use it at home or on a café menu, with the flavour that suits each one.

No heat. The gel skin dissolves in hot drinks and hot desserts. Drain first. Lift the pearls out with a slotted spoon. Add last. Spoon it in just before serving, about 30–40 g per drink.
The classic. Put the popping boba at the bottom of the cup, then pour in an iced milk tea made from a boba premix. Fruity pearls such as mango or blueberry lift a taro milk tea, and chocolate suits a chocolate or cookies and cream shake.
Popping boba and fruit tea are a natural pair: the pearls repeat the fruit in the drink. Try passion fruit in a lemon iced tea, or lychee in a green fruit tea. See our mango bubble tea guide for a full mango build.
A spoonful of watermelon or strawberry popping boba turns a nimbu soda or lemonade into something people photograph. Our Mango Mint Popping Refresher is a ready example.
Put the pearls at the bottom of a tall glass, add ice, then pour the mocktail over. The colour shows through the glass and every sip has a burst. Berry flavours such as raspberry and black currant work well with mint and lime.
Add popping boba as the last layer on a chilled falooda, after the ice cream, so it stays cold. Strawberry and mango go with rose syrup and kulfi flavours. It is an easy way for a dessert shop to make its falooda different.
Spoon popping boba over a scoop of ice cream or a sundae. Mango on coconut ice cream and blueberry on vanilla are good starting points.
Frozen yogurt bars use popping boba as a premium topping that customers pay extra for. At home, add it to chilled yogurt, a smoothie bowl or a chia bowl.
Layer it into parfaits and dessert jars between cream and fruit. Coffee popping boba in a tiramisu-style cup and lychee in a coconut parfait are two café ideas. Our boba desserts guide has more dessert builds from the same flavours.
Scatter it over waffles, pancakes or a chilled cheesecake just before serving. Let hot waffles cool for a minute first, because heat breaks the pearls.
Coffee popping boba gives an iced coffee or cold coffee a burst of coffee flavour. Chocolate popping boba suits an iced mocha. For coffee with chewy pearls instead, see boba coffee.

No. The thin gel skin dissolves in heat, so the pearls will not burst. Use popping boba only in cold or room-temperature drinks and desserts.
About 30–40 g at the bottom of the cup is the usual serving. Adjust it to taste and to your price.
Yes. Add it as the last layer on a chilled falooda, after the ice cream, so the pearls stay cold and burst on the first spoonful.
