Instant vs regular tapioca pearls: which should you buy?

Instant boba pearls and regular tapioca pearls give the same chewy pearl. The difference is time, sweetness and cost per cup. This guide compares them side by side and tells you which suits a home, an event or a café.

The short answer

Regular tapioca pearls are raw and need about an hour of boiling and resting. Instant boba pearls are already cooked and sweetened, and microwave in 2–3 minutes. Both give the chewy pearl in bubble tea. Choose regular pearls if you make many cups a day, and instant pearls if you make a few cups or have no time to cook.

Regular tapioca pearls: cooked fresh

Regular pearls are what most bubble tea shops cook. They are raw and dry in the pouch. Our Classic Black pearls list only tapioca starch, caramel for colour and water. To cook them, use 1 part pearls to 10 parts water, boil for 30 minutes while stirring, then cover and let them rest for 35 minutes. Toss them in brown sugar syrup and serve within 8 hours.

The step-by-step method, with a video, is in our guide to how to cook tapioca pearls.

Why cafés choose them: one batch serves many cups, the cost per cup is lower at volume, and you control the sweetness and how soft the pearls are. The catch: you need an hour, a big pot and a plan to cook in batches through the day, and pearls left after 8 hours are wasted.

Instant boba pearls: no boiling

Instant pearls are cooked and sweetened at our plant and sealed into single-serve sachets. One sachet is one cup. To prepare them:

  1. Tear open the sachet and tip the pearls into a microwave-safe cup.
  2. Microwave for 2–3 minutes, or simmer on the stove, until soft and glossy.
  3. Pour your milk tea or latte over them and serve.

Why people choose them: no pot, no skill and no leftover pearls. A cloud kitchen, an event stall or a home can put real tapioca in a cup in minutes. The catch: the cost per cup is higher than cooking raw pearls in volume, and the sweetness is already set.

Our DIY Boba Cups also contain a sachet of instant pearls, along with the premix and the cup. Read our bubble tea kit guide if you want everything in one cup.

How to keep tapioca pearls chewy

  • Do not refrigerate cooked pearls. Cold makes tapioca hard, not fresher.
  • Hold them in syrup. Brown sugar syrup keeps cooked pearls soft and glossy through service.
  • Cook in batches. A busy counter cooks several smaller batches through the day instead of one pot in the morning.
  • Heat instant pearls per drink. Warm a sachet when the drink is ordered, not in advance.
  • Store raw pearls dry. Keep them below 25°C, away from heat, moisture and sunlight. Moisture spoils raw pearls.

Classic Black or Taiwanese?

Both formats come in two styles. Classic Black is the large black boba pearl with a deep colour and full chew, the base of a classic milk tea and a brown sugar pearl latte. Taiwanese is a refined Taiwanese-style pearl with a clean bite and smooth finish, chosen for signature milk teas. Pearls are neutral in taste on their own; they bring texture and take on the syrup they sit in.

Which should you buy?

  • Home, a few cups a week: Instant Classic or a DIY Boba Cup.
  • Parties and events: instant sachets, so nothing goes to waste.
  • Small café or cloud kitchen: instant pearls while sales grow, then boil-packs once you sell steadily through the day.
  • Busy café: Classic Black or Taiwanese 500 g boil-packs.

What are instant boba pearls?

Instant boba pearls are tapioca pearls that are already cooked and sweetened, packed in single-serve sachets. You microwave a sachet for 2–3 minutes and tip the pearls into the drink, with no boiling.

How long do regular tapioca pearls take to cook?

Use 1 part pearls to 10 parts water, boil for 30 minutes while stirring, then cover and let them rest for 35 minutes. Plan about an hour from start to finish.

Do instant tapioca pearls taste different from regular ones?

The pearl is the same; the format is different. Raw pearls are neutral and take on the syrup you hold them in, while instant pearls come pre-sweetened.

How long do cooked tapioca pearls stay chewy?

Serve cooked raw pearls within 8 hours, and heat instant pearls when the drink is being made. All tapioca firms up as it cools, and refrigerating cooked pearls makes them harder.

Which tapioca pearls should a small café buy?

If you sell many cups every day, the 500 g boil-pack costs less per cup and gives you control over each batch. If you sell a few cups a day, or have no time to cook, instant sachets avoid waste.

What is the difference between Classic Black and Taiwanese pearls?

Classic Black is the large black boba pearl with a deep colour and full chew. Taiwanese is a refined Taiwanese-style pearl with a clean bite and smooth finish.
