Assam, Ceylon and Vietnamese black tea compared for milk tea and bubble tea: how each tastes under milk and ice, CTC versus broken leaf, and a simple test to choose the right tea for your own cup.
For most milk tea and bubble tea, Assam is the safest choice: it is malty, full-bodied and brews dark, so it still tastes of tea after milk, sugar and ice go in. Ceylon gives a brighter, brisker cup and is often blended with stronger teas. Vietnamese black tea is usually the lowest-cost option, with quality that varies a lot from lot to lot. The right answer for your shop is the tea that tastes best in your cup, at your milk ratio and sweetness.
Strongest under milk. Assam (CTC brews strongest and fastest). Brightest. Ceylon. Lowest cost. Usually Vietnamese. Best way to choose. A side-by-side test in your own recipe, described below.
Milk, sugar and ice all soften tea. Milk fat coats the tannins that give tea its grip, sugar masks bitterness, and ice dilutes the cup as it melts. A delicate tea that tastes lovely on its own can disappear completely once a bubble tea is built. That is why shops brew their tea much stronger than they would for a plain cup, and why the leaf itself needs body and colour.
| Assam (India) | Ceylon (Sri Lanka) | Vietnamese | |
|---|---|---|---|
| Taste | Malty, full-bodied, strong | Bright, brisk, lighter body | Varies widely by lot |
| Colour under milk | Deep, holds well | Lighter, golden | Varies |
| Typical use | House milk tea base, chai, Assam milk tea | Blends, Hong Kong-style milk tea, fruit tea | Price-led blends |
| Cost | Mid | Higher | Usually lowest |
Kenyan CTC is another common blending tea: brisk, with strong colour. In Taiwan, a locally grown Assam cultivar from the Sun Moon Lake area is sold as a premium tea, at a premium price.
CTC (crush, tear, curl) turns the leaf into small, tight granules. It brews fast and strong, which suits urns, batch brewing and shops that brew several litres at a time. Broken orthodox leaf keeps more of the leaf's structure and gives a cleaner, brighter cup; it suits shops that brew to order or want a more premium tea note. Many chains sample both and choose by taste.
Shops that brew their own tea control the taste and the cost, but need a brewing routine and staff to run it. Shops that want speed use a milk tea premix, which holds the tea, milk and sugar in one powder. Many chains do both: brewed tea for the signature milk tea, premixes for flavours such as taro or Thai tea.

Assam is stronger and maltier and holds up better under milk. Ceylon is brighter and brisker, with a lighter body, and is often blended with stronger teas or used in fruit teas.
