Mix 3–5% of the powder into the dry ingredients of your own sponge or cake recipe, then bake as usual. It is a flavouring, not a complete cake mix — your recipe still supplies the flour, eggs or egg replacer, sugar, fat and raising agent.
Use it to flavour sponge & chiffon cakes, cupcakes, muffins, layer cakes and dessert bases. It goes into your own batter rather than replacing it; finish the bake with cream, ganache, fruit or a dusting of tea powder.
