Mix 100 g of powder with 100 ml of milk or water and whisk to a smooth, lump-free batter. Pour into a greased tin and bake at 170–180°C for 25–30 minutes, until a skewer comes out clean. Cool fully before layering, frosting or serving. Scale the 1:1 powder-to-liquid ratio to any batch size.
Use it for sponge & chiffon cakes, cupcakes, muffins, layer cakes and dessert bases. It is a complete base — just add milk or water, bake, then finish with cream, ganache, fruit or a dusting of tea powder.
