Ube drinks: latte, milk tea and more

Ube, the purple yam from the Philippines, makes some of the most photographed drinks on any bubble tea menu. This guide covers the ube drinks a café or home kitchen can make, the printed method for each, and whether to use ube syrup or ube premix.

The short answer

Most ube drinks start the same way: 15–30 ml of ube syrup stirred into 100 ml of milk. Served over ice it is an ube latte; add tea and it is ube milk tea; add tapioca pearls and it is ube boba. For a thick, evenly purple blended drink, use the Ube Boba Premix instead, blended with chilled milk and ice.

Ube latte

Add 15–30 ml of ube syrup to the cup, pour in 100 ml of milk and mix until the syrup has fully dissolved, then add 5–10 ice cubes. That is the method printed on the syrup. For a dirty ube latte, pour a shot of espresso from your own machine over the top.

Ube milk tea and ube boba

Make the latte above and add 10–15 ml of black or green tea concentrate for a tea backbone. Put 30–40 g of cooked tapioca pearls in the cup first and it becomes ube boba; the dark pearls show well against the purple. Both full methods, premix and syrup, are in how to make ube milk tea.

Blended ube with the premix

For a thick, creamy, evenly purple drink, blend 15 g of ube premix with about 100 ml of chilled milk or water and 5–10 ice cubes until smooth, then pour over the topping. The premix is made for the blend method; shaking is not suggested. Which one suits your menu is compared in ube premix vs ube syrup.

More ways to use ube syrup

  • Ube with nata de coco or popping boba. Drain nata de coco or popping boba and add 30–40 g instead of pearls. Keep popping boba for cold drinks only.
  • Ube with cheese foam. Top an iced ube latte with whipped cheese foam for a salty-sweet cap.
  • Ube desserts. Drizzle the syrup over shaved ice or ice cream; the ice cream is your own.
