Iced tea and lemonade premix: how cafés serve them

Iced teas and lemonades are the easiest cold drinks to add to a café or restaurant menu. With a premix there is no brewing, squeezing or balancing sugar: one scoop, chilled water and ice. This guide covers the doses, the flavours and the simple variations.

The short answer

An iced tea premix is a powder with the tea, fruit flavour and sweetness in one. A lemonade premix carries the lemon, tang and sweetness, often with herbs and spices. Both dissolve in chilled water: 15–20 g of iced tea mix in 200–250 ml, or 20–30 g of lemonade mix in 200 ml, then ice. Every glass tastes the same, whoever makes it.

Tips for serving

  • Dissolve before the ice. Powder dissolves best in chilled water before ice goes in.
  • Keep it sealed. Store packs cool and dry and reseal after opening.
  • Add a topping. Popping boba or nata de coco turns an iced tea into a premium fruit tea.
